今回の「先生に聞いてみた」では、長年にわたって、身体のためにいい食品の研究開発に携わってこられたバイオ環境学部の藤田裕之教授にいろいろ聞いてみました。

医薬食同源という、健やかな生活に役立つために。

Q:研究の内容についておたずねします。私たちの暮らしと、どのように関わりますか。

野菜ひとつとってみても、そこにどんな成分が含まれているかということは、まだまだ詳細については解明されていないと言えます。 たとえば身近な例で言いますと、京野菜として知られる、京ニンジン(金時ニンジンとも呼ばれています)は、一般的な西洋ニンジンとは、見た目もあきらかに違いますね。赤みが濃いです。食べても違いがはっきり違います。 肉質はやわらかく、甘味が強く、どちらかといえばニンジン特有のにおいもなく、あっさりしています。それに西洋ニンジンに比べて食物繊維が豊富です。 このように、野菜や果物、あるいは自然からの恵みとしての農作物は、見た目の色や形や姿が違うだけでなくその栄養成分はもちろんのこと、その機能性も違ってきます。 京野菜についても、それぞれさらに分析していけばもっと細かい成分が見つけられると思われます。 つまり、私の研究は、まず食品の持つ機能性を見つけ出し、それらの成分を微細に分析研究するということになります。

Q:先生は、一貫して、「身体にいい食品」の研究をされてこられたのですか。

ところで、食品には三つの働きがあることをご存知でしょうか?まず、一つ目は栄養的な働きで、これは生きてくために必要なカロリーやビタミン、ミネラルのような栄養機能のことを指します。二つ目は、食事を楽しむための味覚やにおいがこれにあたります。最後に三つ目の働きですが、私たちの身体に影響を与えて体調を整えるような作用、これを「体調調節作用」と言いますが、これが近年注目を集めている「身体にいい食品」の機能です。
そこで、私は、これまで主に、現代人にとって切実な課題でもある「メタボ体質の改善」のための食品開発に向け、基礎研究から動物試験、ヒト治験まで、いわゆる食品の機能性に関する研究を手掛けてきました。
また、同時に、大学の研究と一般企業の製品開発とを結びつける、オープンイノベーションの活動も行うことで、製品化にも携わってきました。
これらの経験を、ぜひとも理想の地で、学生たちとともにのびのび実践していくことを望んでいます。
たとえ失敗したっていいんです。まずは、なんでも興味をもってやってみることです。
100の失敗でも、たった一つの新たな道が見えてくる。それが、当たり前なんです。
まずはいっしょに、前へ、歩み出しましょう。

Q:伺っていますと、時代の先端を行く研究のように思われます。求められるものも多様化してきていますか。

現代の生活者の傾向として「食の安全と安心」ということはすでに広く浸透してきました。さらに「美味しく食べて、美しく、健やかに」といったニーズもますます高まってきています。アンチエイジングといった言葉も、普通に語られていますね。いわゆる、栄養補助食品や機能性食品といったものが、病気になってしまう前になんとか普段の食生活に取り入れて、健康を維持しようとする食品が盛んに求められています。たとえば血糖値を上げにくくする食材、血圧を安定させる食材など、今や、明確な効能までも語られるようになってきています。カテキンやクルクミン、セサミンなどの機能性成分についても一般の方々にも広く知られるようになってきました。「身体にいい成分」というのはまだまだ未知のものがたくさんあるはずです。よく「これを食べると○○にいいらしい」と言ういわれの食材がありますが、伝統野菜にも数多くあり、科学的なメスをいれることでより明確にできると考えています。そうしてこのいまだ知られていない成分を、”発見”したり、成分そのものの含有比率を高めたり、新たな化学的な合成で創りだしていくのも、私どもの役割だと考えています。

Q:本当に、世の中に役立つ研究ですね。これからの抱負についてお話しください。

人それぞれ求めるものや補いたいものが違いますよね。
なんらかの身体の不具合を治したい、抑えたい。また太りたい人ややせたい人、色白ですべすべした肌を維持したいであるとか、実に多様なニーズが社会の中にあります。
そのために、まずは、最も有効な成分を、農作物の中から見つけ出すことが、私どもの研究分野のテーマだと考えています。また、食材を加工する工程で、これまでどうしても廃棄されたり、飼料としてしか使われてなかったものの中にも、あらたな有効成分を発掘することで、未利用資源の有効活用も可能になるのではないかと考えています。
ただ、漢方薬などの医薬品の開発が目的なのではありません。言ってみれば、自然の中の田畑や里山から得られた農作物と、それを食する生活者の身体を結びつける仲立ちとして、その間にあって、豊かさや健やかさを考え、見つけ、創りだしていくということでしょうか。
そういう意味では、医薬食同源という道を、現代の科学的手法を屈指することで追求していくことだと思っています。

Q:学生たちに、ひとことメッセージを。

食品に興味がある。動植物、生きものが好きということが大事。それから実験は、根気がいります。
しかし、偶然にしろ必然にしろ、新しい発見があったときの喜びは、なにものにもかえがたい体験になります。
たとえば普通にマーケットに売ってる野菜でもいいです。はじめの動機は、なんだっていい。「これって何だろう?」という疑問を自分で解決してみてください。
自分だけのスタイルで、まずは大好物の野菜についてとことん研究分析してみてください。

In this issue of “Tell Us Teacher”, we visited Professor Fujita at the Faculty of Bioenvironmental Science, who has been working many years on research for the development of healthy food products.


Living a healthy life using the concept of iyakushoku dougen—the concept of obtaining healthy foods and medicines from the same source.

Q:I would like to ask you about the contents of your research. How does it relate to our lives?

Take a vegetable, for example. The details of what ingredients are contained in it are still unknown. For example, Kyoto carrots (also called “Kintoki carrots”), are a type of Kyoto Vegetable, and they are clearly different in appearance from ordinary Western carrots. They are a darker red color. You can clearly tell the difference when you eat it. The flesh is softer and sweeter, and it has a lighter flavor without the characteristic smell of carrots. They are also richer in dietary fiber than Western carrots. As you can see, vegetables, fruits, and other crops can differ not only in color, shape, and appearance, but also in their nutritional content and functionality. I believe that further analysis of Kyoto Vegetables will reveal more detailed components. In other words, the first goal of my research is to discover out the nutritional functionality of foods, and then to analyze and study those components in detail.

Q:Have you always been a researcher of “health foods”?

Did you know that all food has three basic functions? The first is its nutritional function, which refers to the nutritional components such as calories, vitamins, and minerals that are necessary for survival. The second is taste and smell, which are necessary to enjoy a food. Finally, the third function is to regulate our physical condition by influencing our body, which is called “physical regulation”.

This is third function is the function found in “good-for-your-body foods”, and it has been attracting attention in recent years. Therefore, I have been engaged in research on the so-called functionality of foods, from basic research to animal studies and human trials, with the aim of developing foods for the “improvement of metabolic syndrome,” which is a serious issue many people suffer from today.

At the same time, I have also been involved in commercialization through open innovation activities that link university research with product development in general companies.

Here at KUAS, I get to put these experiences into practice in an ideal environment.

It doesn’t matter if you fail. Always be curious, and willing to try Even if you fail 100 times, you will find a new way. Let’s find a way forward together, and discover new foods that can make for a healthier and tastier tomorrow.

Q:From what I hear, your research seems to be at the forefront of today’s trends. Are the demands of your research becoming more diverse?

“Food safety and security” has already become a widespread trend among today’s consumers. In addition, there is a growing need to “eat well, be beautiful, and be healthy.” The term “anti-aging” is also commonly used now.

So-called nutritional supplements and functional foods are actively sought after to maintain health by somehow incorporating them into our daily diets before we become ill.

For example, foods that prevent blood sugar from rising, foods that stabilize blood pressure, etc., are now being talked about in terms of their clear benefits. Functional ingredients such as catechins, curcumin, and sesamin are also becoming more widely known to the general public.

However, there are still many unknown ingredients that are good for the body. There are many ingredients that are said to be good for the body, but there are also many traditional vegetables that are said to be good for the bod as well.

We believe that it is our role to “discover” these still unknown ingredients, to increase the content ratio of the ingredients themselves, and to create them through new chemical synthesis.

Q:Your research seems really useful. Please tell us about your future ambitions.

Each person has different needs.

We all want to cure or control some kind of physical problem. People want to gain weight, lose weight, keep their skin white and smooth, etc. There are so many different needs in our society.

For this reason, we believe that the theme of our research field is to find the most effective ingredients in agricultural products. In addition, by finding new active ingredients in foodstuffs that have been discarded or used only as animal feed in the process of processing foodstuffs, we believe that it will be possible to make effective use of unused resources.

However, our goal is not to develop medicines like those found in Chinese herbal medicine, but to act as a mediator between the crops obtained from the fields and forests and the bodies of the people who eat them, and to think, find, and create affluence and health in-between.

In this sense, I believe that we should pursue the path of medicine and food as if they come from the same source, utilizing modern scientific methods.

(Note) “Forest” in this context refers to an ecosystem that has been influenced by humans as a result of being adjacent to human settlements.

Q: What message do you have for students?

Have an interest in what you eat. It is important to like and care about animals, plants, and living things. Also, experimentation requires patience.

However, the joy of discovering something new, whether by chance or inevitably, is an irreplaceable experience.

For example, you can even sell ordinary vegetables at the market. The initial motivation can be anything. Try to research and analyze your favorite vegetables in your own unique style.

実験につぐ実験、研究開発の時間の合間に聴く、音楽に癒されています。クラシックからロック、ニューミュージックまで心休まる音は、不可欠ですね。たまに合唱団で歌ってストレス解消しています。
それから、けっして「身体にいい」と無条件に言えないお酒は、大好きですね。「メタボ体質の改善」に向けた、機能性食品の開発をやってきましたが、自分自身、「スリム体質」と問われれば、「セミメタボ」かもしれません。まさに「○○の不養生」。 それから、ここではあまり言えませんが、お酒にまつわる「あちゃー」と言える失敗談もいっぱいあります。
