  • Dr. Shiga received his Doctoral of Engineering in Food Engineering from Tottori University in 2003, and then spent 10 years in product development and academic research at NIPPOH CHEMICALS CO., LTD. and CycloChem Co., Ltd., using powder stabilization technology for fragrances, oils and fats. When the Great East Japan Earthquake occurred off the Sanriku Coast in 2011, he participated in a food development project aimed at revitalizing the local food industry as a postdoctoral researcher at Kagawa University.

    Dr. Shiga has submitted over 20 peer-reviewed papers in the fields of food engineering, bioengineering and molecular science and has presented over 50 research papers at academic conferences in Japan and abroad. He has given numerous lectures at seminars for engineers sponsored by local governments and publishers.
    He is currently a full-time junior associate professor for the Faculty of Bioenvironmental Sciences at Kyoto University of Advanced Science.
    He has a great interest in local culture and landscape, and in his spare time, he mainly enjoys traveling. He has visited close to 30 countries and regions, including Asia, America, Europe, Oceania, Africa and the Middle East. Another hobby of his is taking pictures of buildings and scenery that catch his eye during his travels.

  • The Kyotanba Region, where Kameoka Campus is located, is thriving in the production of traditional vegetables, but in recent years, the aging of farmers and the lack of successors have become major problems.

    Therefore, efforts are being made to breed and grow brand-name vegetables for sustainable agricultural production and to develop processed foods using these vegetables. The Food Development Laboratory is working with the local community to develop processed foods that take advantage of the distinct taste of brand-name vegetables and is working to revitalize the local community by promoting the sixth industry.
